Recipe of the week:
Lynda's Fried Chicken Fingers
Chicken tenders (I usually allow 3-4 per person)
Kentucky Kernel Seasoned Flour
Salt and Pepper
Canola oil
Heat the oil to 300 degrees
Roll the tenders in the flour. Fry on first side til golden brown. Will probably take about 10-15 minutes. Flip. Add a little more salt and pepper. Fry til golden brown...another ten minutes or so. Turn the heat down to low. Cover the skillet and let the tenders "steep" for about five minutes. This keeps them from drying out but still keeps them a bit crispy. I always fry them the night before the tailgate and then serve them at room temperature at our tailgate. Enjoy! Go Cats and Go Cards!
